Red Peppermint Crinkle Cookies - YUMMY!




I recently ran across these cookies on pinterest and was intrigued! I couldn't wait to make these for the holiday season! Wow, they were so easy to make and turned out perfectly. Honestly, I had never made cookies from a cake mix before. It only took 4 ingredients and a few minutes to make these cookies. The original recipe came from here.

Now that I know how simple they are to make, I have several ideas for future cookies! These were made with peppermint extract and crushed candy canes for the Christmas holidays! They would be just as delicous without too!
The basic recipe for cake mix cookies is as follows:

1 – Cake Mix

6T – Melted Butter

2 – Eggs

Mix the above together until well blended.

Mix 1 cup powdered sugar with 1 tsp cornstarch in shallow dish. Drop cake mix into powdered sugar, roll into balls and throughly coat. Place on cookie sheet. I lined my sheet with parchment paper. Bake for 9 minutes in a 375 oven.

If desired, add 1 tsp peppermint extract and some crushed candy canes to the batter before rolling into balls.

These cookies are soft and moist and oh so chewy!

Sarah ....

Sarah hides from the camera each time that she sees it. It is so frustrating and difficult to get a good picture of this little girl. The other day, she was laying in the chair all snuggled up watching tv. While she was laying there I tried to sneak a photo. Once she saw me, she covered her face with the blanket. So, here she is peeking out from behind the blanket.

This month, they created a digital kit to help the vicitims of the earthquake in Port Au Prince. The kit is fantastic. All proceeds of the sale will benefit Doctors without Borders. Christmas Morning 2009

Christmas morning!!! Nanny and Papa were with us as well as Grandma Judie and Grandpa T John. We had lots of family fun!!!

Santa was good to everyone this year. John received a ripstik. So far is has been very challenging for him. Hoping for warmer weather soon. Sarah received a razor scooter. She loves it! Matthew recieved a 16" Lightning McQueen big boy bike. He needs to continue practicing. He will be riding it soon.

Christmas Eve 2009

Ok, so I am a little slow at actually posting photos this year. I started out so strong. I am going to continue to try to post more timely. With that being said, this photo is from Christmas Eve. The kids are all dressed up and ready to Christmas Eve church services.



After church we returned home to a nice dinner with family. Grandma Judie, Grandpa T John, Nanny, Papa, Uncle Josh and Aunt DeAnn joined us for the festivites. Dinner was served, cookies for santa were set out and reindeer food was sprinkled on the lawn. We were ready for Santa.

January 8th 2010 - Day 8

Laughter and smiles....this is what we are to capture today. It was perfect timing for the photos that I took of my children yesterday. It snowed yesterday afternoon and last night. My kiddos were so excited. Once the first snowflake hit the ground, they were begging to go outside to play. They couldn't wait to catch them on their tongues. Here is a photo of them all bundled up and ready to play.

January 7th 2010 - Day 7

For today's challenge, we were encouraged to photograph a favorite food. I photographed our dinner from last night. It has been unseasonably cold here in Georgia lately. We have had several days recently where the temperature did not even rise above freezing. I have always liked to eat something warm and comforting when it is cold. So for dinner tonight, I cooked chili with sweet buttermilk cornbread. They were both delicious. I loved the recipe for the cornbread. January 6th 2010 - Day 6

For today's 365 challenge, we were encouraged to take a picture of our desk. Where we work and spend our time. Mine is a mess and I did not clean it up for this photo. This is where I spend my time. This is my desk. My OWN space where I work and play.

Matthew's First Day of School - 2007

I have always loved this picture of Matthew. This was Matthew on his first day of school in 2007. Isn't he cute? He was so excited about his first day. He was all ready to go with his own sippy cup!!! This digital page was created using a special font called "body hunter". I used that font for the word "school".

Today's photo is of a small portion of my fabric collection/obsession. I have stacks of fabrics in various prints/patterns/styles. I love fabric. It comes in so many beautiful colors. It is such a fun thing to "play" with. What would you like to create today?

January Challenges

Each month at Gotta Pixel, there are several challenges in which to participate. I love these challenges. They are fun and at times very challenging. Each one comes with a set of rules that are to be followed. These are the challenges that I have participated in so far this month.

The first challenge is called an element challenge. In this challenge, I had to create one digital scrapbook page and use beads in the layout. Here is my completed page:

January 3rd 2010 - Day 3

For today's challenge, I took a picture of my beautiful Amaryllis. I purchased this flower in early December. It bloomed yesterday and the colors are so vibrant. I love red flowers.

January 2nd 2010 - Day 2

So I don't think I explained what I am doing in the first post. I have decided to take the 365 day photo challenge here. The basis of this challenge is to take a photograph each and everyday for the whole year. So here is where I start. On day 2, they challenged us to take a picture of a favorite toy. Our life would not be complete without our toy cars. We LOVE them. We talk to them, play with them, love them, sleep with them and generally have at least one or two with us everywhere we go.

January 1st 2010 - Day 1

Today, I am posting a picture of my favorite subjects. It is 3PM on January 1st. This is what my children have been doing all day. I just asked them if they would like to take a break to eat. Sarah replied "Mom, we are on vacation. It is OK if we don't get dressed or do anything all day!". So there you have it....

More scrapbook challenges...

Recently, I have participated in several scrapbook challenges. I am really enjoying digital scrapbooking. Here are a couple of pages that I recently made. The first is of John at age 3. He loved this truck.



The next one is of Sarah. We were given these digital papers and elements and challenged to created a page. Here is what I created. This is a picture of Sarah playing in the snow. It doesn't snow often here. It has only snowed 3 times in the last 10 years. Luckily, the last two times have been in the last two winters so the kids have played in snow. It is so exciting for them.

Pumpkin Carving!!

What fun we had carving our pumpkins this year. All of the kids (including Jim)participated. Matthew created a robot pumpkin. John created a scary pumpkin while Sarah created a smiley pumpkin. Look at us working hard.

Braves Game October 2009

The challenge was to create a layout that uses a photo that has been run through the colored pencil filter. Here is my layout. I really like how the photo was changed by using the filter.
